Traditionally mde in the Balearic Islands, Sobrasada is a spreadable cured sausage similar to the Calabrian N'duja. Its vibrant colour comes from paprika sourced directly from Hungary, and its spicy flavour adds a new dimension to many familiar dishes. Originally produced to mark the annual pig slaughter festival (Mantanca) in autumn or winter, it has been made since the 15th century, when paprika was first introduced to the islands form the newly conquered Americas. Aside from N'Duja's more familiar use on pizza, sobrasasada makes a wonderful filling for pasta or the Spanish pasties Empanadas; and can also form the base for a variety of pasta sauces, risottos, stews and stuffings. In the Balearics it is spread on toasted bread with a drizzle of honey.
